Another Way of Hosting: Dar Kawa Becomes Vegetarian
Choosing to become a fully vegetarian riad in Marrakech felt natural. It was not a marketing decision, but an evolution.
A desire to host differently. To cook differently. With awareness. With flavor. To align our daily practices with our convictions.
Vegetarianism became a logical continuation of the spirit of Dar Kawa – an intimate, joyful transition. Because a riad can also be a place for exploration, a laboratory of taste, a house of hospitality that gently asks: what if we tried something else?

A Cuisine Guided by the Seasons… and Intuition
Our vegetarian Moroccan cuisine begins at the market. We cook with what the season offers, with what Moroccan soil has generously produced that day.
Saïda, our chef for over twenty years, composes each dish according to arrivals and inspiration. Youssef sources the best produce. Together, they improvise, reinterpret, and refine.
Every vegetarian recipe tells a story, balancing simplicity with precision, authenticity with creativity.
Morocco Without Meat: A Revisited Tradition
Reimagining traditional Moroccan dishes without meat is not a restriction. It is an opportunity.
At Dar Kawa, we gradually let go of meat, then fish. What remained was an essential question: how do we redefine pleasure? Flavor remains – even clearer, more vibrant, more profound.

What You Will Eat With Us
Examples of Moroccan vegetarian dishes served in our kitchen:
Hand-rolled barley couscous with winter vegetables, caramelized onions, and raisins.
Gently spiced chickpea tagine inspired by the traditional Kefta Tagine but twisted.
Crispy vegetable pastilla with vermicelli and caramelized vegetables.
Seasonal soups and salads inspired by the day.
Homemade desserts such as warm dried-fruit tagine with dates and pear ice cream.

A Personal Commitment Toward a Gentler World
Dar Kawa is a vegetarian riad in Marrakech but without preaching or dogma. This choice began as something personal and became collective.
Why This Choice?
Because living differently also means cooking differently.
Because ethics are not decorative.
And because animals matter.
Because the planet is under strain.
And because creative challenges inspire us.
Mais aussi parce qu’on aime relever les défis créatifs.

Breakfast: Always Evolving
Breakfast at Dar Kawa continues to evolve: homemade plant-based milks, overnight chia seeds, house-made granola, whole-grain bread, msemmen, sourdough harcha, seasonal avocados, homemade jams, cooperative honey, and eggs upon request.
What If I’m Not Vegetarian?
You are warmly welcome. What we offer is simply a meat-free culinary journey. Dar Kawa offers a conscious alternative within Marrakech’s vibrant dining scene.
A Final Word — Though Nothing Is Ever Final
Dar Kawa continues to evolve. Our vegetarian cuisine is alive, adapting and listening. Here, simplicity becomes an art of living.
